I Am a Would – Be Technologist of Meat Products
I have passed my entrance exams successfully and now I am a student of the Technology Department. My future profession is a technologist of meat products. At first sight it may seem that a technologist of meat does nothing but carves meat and makes cutlets. It is not quite so.
A technologist of meat products should meet a lot of requirements and know very many things. S/he should know, first of all, the national cuisine of as many countries as possible – but not only the recipe. S/he should be aware of its niceties: what salads, sauces or wines go with thus or that meat dish.
A technologist should know all about the chemical properties of such basic products as salt, soda, starch, spices, fat and oil.
A technologist of meat products knows every possible way to cook meat: to chop or mince it, to grill, to roast, to stew it. S/he also knows the difference between cutlet and chop, and can say tender pork from tough beef, ham from back rasher.
A technologist of meat products is an artist at the kitchen: poultry and game such as partridge, pheasant, duck or chicken, each cooked in its own way, become delicacies for gourmands.
When a technologist of meat products becomes a real professional, s/he can easily find a well-paid job at a restaurant, or any other food industry enterprise.
