Ирландское рагу.
Это знаменитое блюдо - классический пример для того времени, когда в семьях был всего один горшок, в котором все готовили. Основные ингредиенты – мясо (чаще всего баранина), много лука, и еще больше (для Ирландии) картошки. Существует много различных рецептов этого блюда. В каждой кулинарной книге он свой. В некоторых добавляется морковь, некоторые считают это кощунством, где-то используется перловка, где-то нет. Мясо залить холодной водой, вскипятить, слить воду, остудить в холодной воде. Растопить масло в большой кастрюле, добавить половину лука, половину всех картошек, чеснок, мешок с травками и пассеровать несколько минут. Добавить мясо и залить это все бульоном. Кипятить на медленном огне 30 минут под крышкой. Мясо должно быть приготовлено наполовину, картошка должна чуть развариваться, и сгущать бульон. Добавить морковь, готовить еще 10 минут, потом добавить оставшуюся картошку и сельдерей, готовить 15-20 минут, добавить капусту, еще чуть поварить. Посолить, поперчить, вынуть мешок с травками. Мясо лучше брать разное – баранина и говядина, капусту можно и обычную, белокочанную, тогда закладывать варить ее надо пораньше, если соус не сгущается, можно муки добавить. Лук очистить, нарезать кольцами и слегка обжарить в сотейнике на растительном масле, добавить к луку морковь, нарезанную тонкими полосками и обжаритьв течение нескольких минут вместе с луком. Баранину нарезать кубиками среднего размера и добавить вместе с нарезанным на четвертинки картофелем в сотейник с луком и морковью. Приправить по вкусу солью и перцем, влить воду и поставить вариться. Не забывайте снимать образующуюся напену. Затем уменьшите огонь, накройте крышкой и томите до готовности мяса и овощей (примерно 1 час). По желанию в рагу можно добавить муку, разбавленную в небольшом количестве воды. Как только рагу загустеет, сразу же с пылу жару подавайте к столу в широкой супнице. По желанию рагу можно посыпать измельченной зеленью.
