A Brief Story of the Trials and Triumphs

a. We would need $ 30, 000 to buy dining room furniture and kitchen equipment and meet the added payroll expenses we would incur.

b. But how to start? I had opened Dana’s Café with money from my personal savings account. I was running the Café like you’d run a household, with cash. My accounting system was a drawer in the desk. Every day I would go to the market and grocery store to shop for the food we needed. I had no vendors. Every month I entered everything into a ledger, but my bookkeeping methods were rather primitive.

c. In conclusion let me say that the results of our expansion were impressive and far reaching. I would like to finish my brief history of the trials and triumphs by telling that we plan to increase our services. Now let me answer your questions.

d. One of them, Oleg Vlasov, handled the kitchen side of things. With his talents and the help of others we developed a citywide reputation for homemade cooking. That first year we prepared and delivered dinners to office workers in downtown, schools and kindergartens. The Café had grown beyond my ability to manage it. I was still trying to run the business in my off hours from the higher school where I worked full-time. I began to realize we could not make more profits and a greater impact in the area, if our operation were larger. The need and demand were certainly there to make a bigger restaurant successful.

e. I am glad to welcome you to our café. It’s a pleasure to show it and share our experience. We opened Dana’s Café in 1993. That was a period of crisis in economics. The Café boasted eight tables and seating for twenty four. I had two great hopes for the Café. One, I wanted a second income to help send my sons to university. And two, I wanted to create a few jobs for my friends - aged 40, hard-luck women, who could not find work elsewhere.

f. Through my involvement with the Small Business Support Program I was put in touch with President of the Small Business Support and Development Center. He agreed to help us. Dana’s Café moved into the new building. I established relationships with vendors. Our eight tables had become sixteen and we added several women to the staff. All of them had come to self-sufficiency because of their steady employment at Dana’s Café.

g. When I was asked about becoming a tenant in the ground floor of a long newly restored building in downtown, the timing seemed right. But I had no idea where to go about getting financing.

Dana:Women working here are former teachers, librarians and engineers. Certainly, they needed skills to handle the demands of the job. Oleg Vlasov was the only professional among them. When we moved to a larger facility, the Café would attract a business-lunch type crowd and these patrons would expect professional and efficient service. So to address the issue of staff training I brought in some restaurant consultants to observe and train our personnel. Now I plan to create a classroom and hire a permanent, full-time staff trainer.

Sergei:???

Dana:We certainly do. Last year we were able to prepare and deliver over 600 New Year free dinners to the elderly and handicapped. We are also working with local churches to provide meals to homeless folks. We involve streetwise, disadvantaged kids and give them temporary jobs.

Paul:???

Dana:We have had a lot of famous persons through our doors – politicians, businessmen, singers, sportsmen, reporters. But the real success of the Café is that we are visited by people living and working nearby.

Sergei: Dana, you have been a success in your business. ???

Dana:I began the Café with no money, but with a willingness to work hard. If I can be an example to others, I will be glad to help and give some advice how to start a small business, how to find financing and handle paperwork. I am ready to share my opinion and experience.

Paul:???

Dana:Our plans now are to expand into the space and to add 40 seats and as many as 10 employees.

Sergei:Dana, thank you very much for your story and presentation.
